THE Summer Salad

The most addictive Summer Salad that we can't make fast enough at the store!

Summer Kale Salad:
  • 2 bunches kale, washed, dried and chopped into bite-size pieces
  • 4 peaches, washed and sliced thin (skin on)
  • 1 pint raspberries
  • 1 pint blackberries
  • 1 cup toasted peans
  • 1 cup fresh chèvre, crumbled (or any cheese you would like)
Honey Balsamic Dressing
  • 1 cup extra virgin olive oil
  • 1/2 cup balsamic
  • 1/4 cup honey
  • 1 shallot, roughly chopped
  • salt and pepper to taste
  • Layer all Summer Kale Salad ingredients
  • In food processor or blender, combine balsamic, shallot, honey, and salt and pepper.
  • Turn blender on, and drizzle in olive oil to create emulsion.
  • Store in fridge for up to 2 weeks, or drizzle over the Summer Kale Salad
