Grilled Endive with Balsamic & Bacon Vinaigrette

Endive is one of those vegetables that a lot of people don't reallllly know what to do with, or think is way too fancy for every day cooking. Well we're here to tell you it's NOT too fancy, and is super simple to incorporate into a weeknight dinner. This dish would also be amazing and impressive for a dinner party, but won't stress you out or break the bank!

Ingredients
For the vinaigrette:
  • 1/4 C Balsamic Vinegar
  • 1/3 C Extra Virgin Olive Oil
  • 1 T dijon mustard
  • 1 shallot, minced fine
  • 2-3 strips bacon, cut into small strips and cooked (fat drained)
For the endive:
  • 5-6 endive, cleaned and cut in half
  • 2 T extra virgin olive oil
  • salt and pepper
Instructions

For the vinaigrette:

  • In a bowl, whisk together the shallot, dijon, balsamic and salt & pepper to taste.
  • Slowly drizzle in the olive oil, while whisking, to create an emulsion.
  • Add in the bacon, stir to combine and set aside.
For the endive:
  • Toss the endive in the olive oil and sprinkle with salt and pepper.
  • Grill on a preheated grill or grill pan for about 3 minutes per side, until just charred.
  • Arrange on a platter and pour the vinaigrette over the top.

This dish is great warm, or room temperature.
