Chocolate Cupcakes for Two… Happy Love Day!

Hey, you. Yea you! I made you a Valentine. Why? Well because you (and all things chocolate, pink, and red) should be celebrated today. Why? Because you're amazing, wonderful, and kind. And because I love ya! It was only a matter of time before I made a chocolate cupcake for two people... I already have these in my arsenal. These are a simple, sweet, and oh so chocolately way to tell someone that you love them. And even though you love them everyday, today is just a little more indulgent.

Ingredients
  • 3 T flour
  • 2 T sugar
  • 1 T cocoa powder
  • pinch of salt
  • 1/8 t baking soda
  • 1/8 t espresso powder (optional)
  • 2 T water
  • 1 T canola oil
  • 1/4 t vanilla extract
Instructions
  • Preheat the oven to 325° and line two cupcake tins (yes, only two) with cupcake liners. Use pink ones, pretty please!
  • In two small bowls, mix the dry ingredients together, and the wet, separately.
  • Add the wet into the dry, and mix well with a whisk.
  • Pour into the tins and bake for 18-20 minutes.
  • Let cool, and frost simply with some melted chocolate (I used 70% dark.)
  • Decorate as you wish.
  • Enjoy!
