Chocolate Chunk and Cinnamon Brioche Bread Pudding

The perfect Valentine's Day treat! Do most of the work the night before, and wake your loved ones up with a delicious, indulgent breakfast!

  • 2 loaves brioche bread, or challah, cut into 2-inch cubes
  • 2 cups whole milk
  • 2 cups heavy cream
  • 4 eggs
  • 1 tablespoon vanilla
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • pinch of nutmeg
  • 1/2 teaspoon salt
  • 1-2 cups dark chocolate chunks (depending on how chocolatey you like things)
  • sanding sugar to sprinkle on top before baking (a few tablespoons) - optional
  • Grease a 9x13 baking dish.
  • Place cubed bread in dish.
  • Add in chocolate chunks and disperse evenly.
  • In a large bowl, whisk together the milk, cream, eggs, vanilla, cinnamon, nutmeg, sugar and salt.
  • Pour the wet mixture over the bread, using your hands/a spoon to press down on the bread and make sure it begins to soak up the liquid.
  • Wrap in saran wrap and store overnight.
  • In the morning, unwrap the casserole.
  • Sprinkle with sanding sugar and bake for about 45-60 minutes in a 350° oven, or until crispy and brown on top, and cooked through in the middle (it will still spring back!)
  • Serve with fresh berries, powdered sugar and syrup!
