Chive Dijon Fingerling Potatoes

These potatoes are a perfect summer side! They can be eaten hot or room temp, and have no mayonnaise, so would be a wonderful addition to any summer picnic!

  • 1 lb fingerling potatoes, cut lengthwise and boiled until fork tender
  • 2 tablespoons dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sherry or red wine vinegar
  • fresh chives, minced
  • 1 shallot, sliced super thin
  • 1-2 teaspoons honey (about a spoonful, I don't often measure this)
  • salt and pepper to taste
  • While the potatoes are cooking, make the dressing.
  • Whisk the dijon, vinegar, honey shallot and salt and pepper together, and drizzle in the oil.
  • Toss the potatoes and herbs in the dressing and taste to finish seasoning.
