Brussels Sprout Salad

A perfect addition to your Autumn arsenal of greens! 

  • 4 cups shredded Brussels sprouts (easily done by hand or in a food processor)
  • 2 apples, chopped into 1/2 inch chunks
  • 1/2 cup dried cranberries
  • 1/2 cup roasted almonds or pecans
  • 1 thinly-sliced shallot
  • Juice of 1 lemon
  • 1 tablespoon each olive oil, apple cider vinegar and maple syrup
  • Combine all ingredients in a large bowl, adding in the wet ingredients last.
  • Toss to combine and season with salt and pepper
