Avocado Egg Salad

Sometimes dinner is best when it's simple, and fresh.

Grapefruit halves, as they are.

Avocado, mashed up with some hardboiled eggs, salt, pepper, olive oil, and a touch of sriracha for heat.

On top of some crunchy, almost burnt toast? Even better.

I don't think I'll ever use mayo in egg salad again. This was ohhhh so much better (and ummm... incredibly easy. Like almost doesn't even qualify as a post)!

I made a small batch for just 1 sandwich with a bit left over, but you could easily double this.

  • 2 eggs, hardboiled
  • 1/2 avocado
  • 1 T extra virgin olive oil
  • 2 t sriracha sauce (more/less depending on your need for heat)
  • salt and pepper to taste
Ok ready? This is going to be complicated so listen up:
  • Mash everything together in a bowl. Put it on a piece of bread, wrap it up in some lettuce, or eat it plain.

Couldn't be easier!
